Edmonds banana cake

Edmond's banana cake

Taken from the infamous Edmond's Cookbook but amended to use less sugar.

Tastes delicious as is, or you can serve with chocolate or lemon & cream cheese icing.

Ingredients

Instructions

  • Preheat oven to 180 degrees and grease/line cake tin.

  • Cream butter and sugar until fluffy.

  • Add eggs, one at a time.

  • Add mashed banana and mix.

  • Dissolve baking soda in hot milk and stir until foamy.

  • Sift flour and baking powder.

  • FOLD dry ingredients into mixture until just combined (small bits of flour are fine - if you over-mix the cake will become dense and less soft)

  • Add to tin.

  • Bake 40-50 minutes until cake is springy.
